When you don't get home from work (and the grocery store) until 8, and have decided to make a tomatillo and jalapeño enchilada sauce from scratch because you're doing a FODMAPS elimination diet and can't be lazy and just buy sauce, dinner doesn't start until around 10. The filling: ground dark meat turkey, red bell pepper, poblano pepper, zucchini, salt &a pepper, cumin, chili powder, oregano and a bit of lime juice. The sauce: tomatillos, jalapeño, cilantro, scallions, lime juice, salt & pepper, cumin, coriander and chili powder. Definitely need to remember to warm up the corn tortillas better next time, but piles of melted cheese makes up for it!
