Simple and somewhat healthy (there's spinach)...
Sauté green onions in a frying pan with butter. Add some paprika and then some shrimp. Cook until pink and move to a bowl.
In the same frying pan, bring half a cup of heavy cream, 1/3 cup of veggie broth and a large spoonful of lemon juice to a boil and allow to thicken (add flour if needed). When almost ready, add a handful of spinach and throw in shrimp. Spoon over cooked pasta and enjoy.
