One pot curry noodles
Press tofu between paper towels weighted down with heavy pot
I stir fried the tofu then the eggplant, remove from pot
Add oil, sliced ginger, minced garlic, red curry paste , Thai red and green chili
Add stock (veg or chicken), bring to simmer
Add coconut milk, rice noodles, brown sugar, salt, tofu and eggplant, let simmer until noodles are soft
Then added cilantro, spinach and lots of lime juice
The noodles absorb most of the liquid. Made this with udon noodles too, ends up more of a soup
