Pan seared-oven finished chicken thighs. Heat oven to 400 degrees. Place a sheet pan on the lower 3rd of your oven. Heat up a cast iron skillet. Chop some fresh thyme leaves. Sprinkle thyme under the skins of the chicken thighs. Season chicken with salt and pepper. Cook skin side down for 8 minutes. Flip over and transfer to the preheated sheet pan. Cook in the oven for 20 minutes. Reserve rendered chicken fat to cook sweet potao hash. *** use organic chicken to use rendered fat for hash or another purpose.
