Slow cooker corned beef with apricot glaze. Place corned beef and spice packet in crockpot, fill with water until covered. Set crockpot to 8 hours. Once cooked and fork tender, take broth from crockpot and cook cabbage + carrots + potatoes to your liking. While veggies are cooking, mix together Dijon mustard + brown sugar + apricot jam. If necessary, microwave 30 seconds or until combined. Let cool. About 5-10 minutes before veggies are done, brush apricot mixture over corned beef and broil in oven 5-10 minutes until bubbly and crusty. Enjoy!
