Grilled sweet potato & tofu quinoa bowl with garlicky tahini dressing.
Handful of greens or spinach, cooked quinoa, thinly sliced radishes and sliced scallions. Grill (or fry or bake) sweet potato wedges and tofu strips. Top with strips of pickled ginger and nori, and sprinkle with sesame seeds. Dress liberally with garlicky tahini dressing:
Tahini, apple cider vinegar, soy, maple syrup, sriracha, chopped garlic. Yum!
