Lemon & Almond Loaf Cake; made for my mum-in-law to celebrate her birthday.

1 1/4 cups flour
2tsp baking powder
1/2 tsp salt
Sift together ⬆️
1/2 cup olive oil
1 cup sugar
1tbsp lemon juice
1 tsp vanilla extract
3 eggs
1/2 cup ground almond
1 cup Greek yogurt (plain)
Zest of two lemons
Mix together ⬆️
Add dry ingredients and mix batter. Sprinkle with almond slices. Bake in a lined loaf tin at 170c for 40-50 minutes.
Glaze: melt 1/3 cup sugar & 1/3 cup lemon juice and then pour over cake once baked.
Drizzle: mix icing sugar with lemon juice into a pliable icing. Drizzle over when cake has cooled
and decorate with vermicelli.
