Sweet pea and chickpea falafel with zucchini noodles in tahini sauce, sides of pickles veggies and zaatar crackers.
Make tahini sauce - lemon, garlic, salt, tahini, pepper and pour desired amount onto spiralized zucchini
Make falafel - squeeze water out of 1 cup frozen peas and 1 can chickpeas. Throw in food processor and pulse with a few cloves garlic, a hot pepper, shallots, parsley, lemon, salt, red pepper flakes, cumin, paprika, 2 tbs flour. Mix in one beaten egg. Pan fry and serve with zucchini noodles and choice of accompaniments! I throw some chopped red pepper and parsley into the zoodles and top them with roasted seeds. On the side we have pecorino, pickled beets and cauliflower, and zaatar crackers. Recipe link is below for falafels, I added an egg based on others' critiques.
