Fork yes. Baby bell pepper nachos. Still eliminating FODMAPS (or trying to stick with it, anyway), and I wish I could have added black beans to these, but they were still delicious! Stuffed with a purée of tomatillos, corn, cilantro, salt, cumin, chili powder, and squeeze of lime juice before being topped with piles of melty shredded Mexican cheese blend. Topped with @cholulahotsauce and a dollop of @daisysourcream, of course.
