Didn't waste the boiled beef when making stock...shredded the oxtail and kept the boiled onions...tore up some red leaf, escarole, and frisee...flash boiled some sweet peas...and turned it into a simple sunny day salad. Dressed with olive oil and a splash of balsamic with a hit of orange zest, crunchy salt and pepper.
