Cauliflower steaks with roasted red pepper sauce and wilted greens:
Roast cauliflower steaks in the oven with a little stock poured over the top. Cook until tender but still holding their shape.
Roast red pepper on a open flame until blistered and charred on all sides. Remove and discard skins. Blend lightly sautéed onion, garlic and tomato with roasted pepper and season with salt and pepper.
Serve with lightly wilted spinach.
