Savory Spring Waffles!
Sauté some chopped onions and corn (fresh or frozen) in a pan with a bit of butter and a drizzle of olive oil.
Let cool while you mix up waffle batter or your choice. Stir in grated cheddar cheese and sautéed mixture.
Poach egg while the waffles cook.
Top with sliced avocado, salted diced tomato, poached egg, and a smattering of hot sauce.
