Made Japanese Quinoa Salad with Shrimp and Citrus Ginger dressing for my lunches next week. Mixed cooked Quinoa with scrambled eggs, English cucumber, shredded carrots, edamame, sesame seeds, and green onion tops. Make dressing whisking together lemon juice, soy sauce, grated fresh ginger, crushed garlic clove, and sesame oil.
