Thinly slice russet potatoes and fennel. Toss with olive oil, salt, pepper and a clove of garlic. Roast at a high heat, covered for around 20 minutes. Uncover and roast till tender-around 10 minutes more. Top with a piece of cod and give another 10 minutes in the oven. Shower with minced parsley.
