The hubs requested ziti, but all I had was penne. Close enough! Browned some sweet Italian chicken sausage. Then sautéed garlic and spinach, with a good healthy splash of white wine for deglazing in the same pan. Then the San Mariano tomatoes joined the party. Simmered for a bit and added the penne to get to know the sauce. Everything then got transferred to my favorite baking dish and topped with mozzarella and Parmesan. Baked at 350 for 15 minutes, and broiled for the last few to brown the cheese.
