Homemade pasta sheets, ricotta filling blended with portobellos & beet greens (sautéed ahead of time) & shredded gruyere & Italian herb & fennel pollen/pepper/garlic/Spanish paprika (incredible herb blend called "South Fork Italian Sausage Spice" by Savory Spice Shop)... rolls all lined up in baking dish (some sauce on bottom) and then covered with homemade marinara with sausage. Once in oven at 350 degrees for 20mins, add mozzarella for 10mins (or broil)...final touch, fresh peas and basil
