A friend raved about this vegan macaroni she made recently, so I tried a variation on it today: sautéed mushrooms and leeks deglazed with wine (I used some leftover champagne), then seasoned with fresh parsley, some powdered kombu, and a sprinkle of nutritional yeast. I finished it all off with a healthy dose of salt, cracked pepper, and cashews (soaked for a few hours them blended). A++ would make again.
