Somewhere between enchiladas and child rellenos, these poblano pepper are stuffed with ground turkey (seasoned with salt and pepper, cumin, and chili powder), black beans, hot Hatch diced green peppers for a bit of spice, and some of the tomatillo-corn purée from last night's scallops. Poured more of the tomatillo sauce over the whole thing, then topped it with shredded cheddar and Monterey Jack, and baked it until everything was hot and bubbly. A bit of cilantro, and it was almost perfect. The only thing that was maybe missing was sour cream, by even without it was fantastic!
