Whisk 4 egg yolks and a tablespoon of lemon juice together in a small saucepan until the mixture doubles. Put pan in a bath of boiling water and drizzle in a half cup of butter while whisking wildly. Add a salt and smokey paprika to taste. Add a tablespoon of vinegar to the boiling water then toss in your eggs to poach. Toast up your bread and put your favourite mixed greens on top. Assemble everything when eggs are done.
