First time making lamb, and it may have been slightly over cooked, but sooo good! Seasoned with salt and pepper, seared then roasted, and topped with ramps butter that I made yesterday afternoon (blanched ramps, butter, lemon zest, and a pinch of salt). Roasted tiny golden potatoes and a simple arugula salad dressed with lemon juice and olive oil made this a fantastic dinner.
