It decided to hail outside today so I decided to make a cozy pantry-clearing black bean and pumpkin soup. Chopped an onion, 3 carrots, 2 stalks of celery, sautéed in olive oil. Added minced garlic and jalapeño. Added a can each of drained black beans, pumpkin purée, and diced tomatoes, and 4 cups of chicken broth. Threw in a bunch of cumin, a little cayenne, paprika, chili powder and salt to taste. Simmer until carrots are soft then blend with immersion blender. Top with whatever - I did toasted pepitas, radish, avocado, cilantro and a squeeze of lime! #notarecipe #f52grams #soup
