Singaporean style veggie fried rice: heat canola oil in a wok till smoking. Add a very generous amount of minced ginger and garlic. Add chopped green/red onions. Add your choice of veggies (i used shredded carrots, beans and peas). Stir fry for a few min. Add some sort of a sambal paste (i used blachan sambal, contains chilis and shrimp paste for some funk). Can use any variety of chili oil, chili paste that you need to use up. Add leftover stale jasmine rice and fry the whole thing. Enjoy with some sliced cucumbers.
