Roasted fennel, cherry tomatoes, lemon, red onion and garlic. Finish with lemon juice the chopped fennel fronds
Toss with olive oil and salt and pepper 375 for 30-40

I made this last night (minus tomatoes... didn't have those). Thanks for the inspiration! Love the roasted lemon especially.
