Roasted Beets
In honor of American Masters: James Beard on PBS.
Jim taught us best way to roast beets. He loved beets puréed with carrots. I love them any way possible.
I like to dice them, toss in a great balsamic, then serve over sautéed beet greens with toasted garlic cloves.

Preheat oven to 400F
-Organic beets, with greens
Any color, the more beets, the better.
-Heavy duty Aluminum Foil
torn into @ 6" squares.
-A pan is easiest, you can use rack in oven, too.

Preheat oven to 400F
🌰Cut greens from beet leaving 1" stem. Save the greens!
🌰Wipe or rinse and dry beets.
🌰Wrap each beet, root side down, with opening at stem.
🌰Bake for 1hr. Time may vary because beets are like that. If large, I keep them in an extra 15min. You can't ruin them!
🌰Let them cool down. Jackets slip off easily.
