Zucchini Butter Pizza
This may not look so attractive, but it is sooo good!
Made a batch of zucchini butter (link below) with freshly harvested golden zucchini, kousa-type summer squash and elephant garlic. Once soft and tender, spread on naan, topped one with Parmesan/Romano blend, the other with Daiya "cheese" (slices melt so nice). Baked at 450° for about 8-10 min. Enjoy:)
