Don't let the colors fool you: this is a super savory dish with three vinegars and three kinds of sesame.
Udon - boiled til almost tender, quickly drained, covered in tahini sauce (tahini, black vinegar, apple cider vinegar, molasses, ginger, garlic, salt, sesame oil) and cooked for another minute more to absorb the sauce.
Zucchini - sliced, rubbed with canola oil, soy sauce, rice vinegar, salt, and pepper, roasted.
Tofu - cubed, roasted with canola oil and salt, then halfway through toss all of it with tahini sauce and roast it some more.
Layer together, top with sesame seeds. Dinner.
