Simple Spanish tortilla with a of lemony herbal mayo (garlic chives, tarragon, and parsley). Thinly sliced potatoes sautéed in olive oil until tender, then a sweet onion sautéed in the same potato oil. Add the potatoes back to the fry pan with the onions and add a dozen scrambled eggs (mine from my own chickens!), salt and pepper. Heat down to low and cover for 15-20 till set flip and serve warm, room temperature, or cold.
