My lattice too turned out..."rustic" but it was oh so delicious! Strawberry rhubarb pie with rye crust. Crust recipe with rye variation from @yossyarefi #sweeteroffthevine cookbook: mix 1 1/3 cups each all purpose flour and rye flour, 1tsp salt. Cut in 2 sticks + 2 tsp very cold unsalted butter with pastry cutter or food processor. Add 1 cup ice water mixed with 1 tbsp apple cider vinegar. Mix and form into two discs, cover in plastic wrap and refrigerate at least 2 hours. Filling was 5 cups of a mix of strawberries and rhubarb cut in 1-inch pieces, tossed with 1 cup sugar, a pinch of salt, cinnamon, cardamom, 3 tbsp cornstarch, and a squeeze of lemon juice. Roll the dough, fit in pie pan, dump in filling and cover with second dough as desired. Bake at 450F for 10min then lower to 350 for another 40-50 min until golden.
