Cioppino served over spaghetti. Sauteed 4 flat anchovy fillets with 1 dried bay leaf, some crushed red pepper and about 6 cloves of chopped garlic in some butter and olive oil. Added in chopped onion, celery, carrot and yellow bell pepper. Then some dry white wine and canned diced tomatoes. Dried thyme, oregano, saffron and fennel pollen went in next. Then a quart of chicken broth. Simmered uncovered for about 45 minutes. Covered at that point to bring up to a lively simmer. Added in some little neck clams and cockles...cooked covered for 3 minutes....then added in some fresh squid rings and tentacles...cooked covered for 2 more minutes....topped with fresh parsley
