It's Copper River Salmon season! Asian farro medley with salmon inspired by #skinnytaste. Marinate salmon for 30min in 3 tbsp soy sauce, 1 crushed clove garlic, 1 tbsp rice vinegar, 1 tbsp honey in the refrigerator. Bring 1 cup pearl farro to a boil in 2 cups water, cook 10-15 min until firm tender. Mix 2 tbsp soy sauce, 1 tbsp sambal oelek, 1 clove crushed garlic, 1 tbsp minced ginger, 1 tbsp rice vinegar, 1 tbsp oyster sauce and honey to taste. Stir fry with a few cups of snap peas and scallions for 5 min. Stir in the drained farro. Cook the salmon for 3 minutes on each side on a grill or nonstick pan. Serve on the farro mixture with more scallions and sesame seeds! #grilling #copperriversalmon #salmon #summer
