Garden Frittata

Freshly harvested red potatoes, blue potatoes, tomatoes, parsley and backyard chicken eggs made a delicious brunch frittata. Boiled potatoes were sliced and fried in butter and olive oil until hot and a little crispy over medium heat. Beat 10 eggs with a splash of whole milk, grated parmesan, chopped parsley, onion powder and kosher salt. Added eggs to potatoes in pan, moving potatoes around to evenly distribute. Put a lid on and lowered heat to med-low. Cooked until just set but still moist on top. Added sliced tomatoes and more grated parmesan then under the broiler for a few minutes until top was set. Let cool a little then slipped out of pan and sliced. Perfect #gardenfresh #brunch
