Overnight oats and fruit. My all time favorite M-F breakfast. Combine 1/2 cup oats and 1/2 cup soy milk in a small container, place in fridge for 1 to 10 hours. In the morning, top with banana, strawberries, and anything else you like. I usually add walnuts as well and if I'm feeling low on fiber, I'll add some chia seeds.
