Spring veg pasta! Roast golden beets, red onion, zucchini, pattypan squash, heirloom tomatoes and bell peppers until just slightly tender. Colors should still be vibrant! For the sauce, I sautéed mushrooms until they released water and began to brown. Add some white wine and stock and reduce! Add all the other veggies to cooked linguine and toss with the sauce. Add piles of Parmesan and red pepper flakes.
