Watermelon rind preserves. Rind of one watermelon, cut into 1" pieces, about 3#, 4 3/4 c sugar, 1 star anise, 1" knob ginger, cut into coins. 1/2 vanilla bean, split. Combine, let macerate over night. Next day, cook over med-low heat until syrup darkens and jam reaches 220 deg F. Remove star anise, vanilla bean and ginger. Can per local instructions. Enjoy.
