Roast cauliflower with olive oil in the oven at a high heat. When browned, toss in some large pieces of scallion and roast a little longer. While warm, sprinkle with some nice vinegar (I used sherry), chili flakes and toasted pine nuts. Finish with a little pecorino. Serve at any temperature, but I think room temp is best.
