Watermelon rind chutney from a recipe with some edits. Place rind (remove green skin) in rice wine vinegar, water, sugar, whole black peppercorns, ginger, and chili pepper (or flakes), salt, bring to a boil and then simmer for 55mins or so, until rind is translucent and the liquid is a bit syrupy. Tangy, sweet & a kick! Great condiment to complement curry (we added to coconut curried lentils) or ribs or other rich meals.
