Super simple, super delicious ⭐️
(Peel if you want and) cut potatoes into thick slices. Butter an ovenproof dish and layer the potato. Pour some vegetable stock over the potato slices, so they are barely covered. Pop into the oven at 250 degrees Celsius.
Slice ripe tomatoes into thick slices and season with a bit of salt. Cut slices of feta and also put to the side.
Once the potato slices are almost cooked through, add spices and herbs to your liking. Put the tomato slices on top of the potato layer and top that off with the feta. Return the dish to the oven until the feta is slightly browned around the edges.
