Sure! First cut aubergine lengthwise and then into half moons, roast for 30 mins in a bit of oil and salt. Make dressing from 6 tbsp yoghurt, tsp harissa, 1 tbsp sumac, clove of garlic crushed, half tsp ground coriander. Stir warm aubergine into dressing, sprinkle with toasted pine nuts and coriander. Enjoy!
