Penne with red wine and chorizo.
Finely slice a red onion, heat some oil in a pan and soften the onion along with roughly chopped chorizo and some chilli flakes.
Bring the pasta water to the boil and start the pasta.
Meanwhile add a small glass or red wine to the onion and chorizo and turn up the heat.
Then add a jar of passata and allow to thicken.
The red wine, chorizo and passata mean the sauce will combine beautifully with the pasta
Drain the pasta, add the the sauce pan and stir together.
