Roasted chicken pesto sandwich!
Marinate chicken breast in the juice of one lemon, two roughly chopped garlic cloves, salt and pepper for an hour.
Pesto: add one cup of basil, one garlic clove, and 1/4 cup of Parmesan to a food processor. Pulse till chopped, add 1/2 cup of olive oil will combined and smooth. Salt and pepper o taste
Roast chicken at 350 for 30 minutes or until cooked, shred and roll lightly with pesto.
Assemble sandwich: toast two slices of bread and add pesto to each side. Add a slice of provolone, fresh spinach and tomatoes. You can top with almost anything, arugula would add a nice peppery bite!
