Peel, slice eggplant. Soak in saltwater; pat dry. Dredge through egg wash, then #Progresso Italian breadcrumbs with a little extra salt. Fry in a #Frybaby at 375F just a few minutes per side. Don't crowd the fryer. Drain on paper towels. While they're still hot, top them with your choice of cheese. Eat them no more than four minutes later, hot enough to make silly faces but not hot enough to blister the roof of your mouth. Light candles to get rid of the fryer stank. (But secretly enjoy the smell anyway.) 🍆🍆🍆
