Coconut rice, salmon, and a side of baked kale and baked sweet potatoes.
Fry salmon in pan with 1 T butter - 5 minutes (skin side up) then flip for 3-4 more minutes over medium heat.
Cool rice as usual, replacing water with coconut milk.
Chop sweet potatoes, combine with a glut of evoo, salt, and pepper. Bake at 400 for 20 minutes. Meanwhile, massage kale with evoo, salt, pepper, and soy sauce. Add to oven (with potatoes) and bake for an additional 10 minutes.
