Bulked-up eggs in hell
Thinly slice 4-6 small potatoes into 1/4" pieces.
Empty 24 oz of marinara sauce into a large skillet. Add potatoes, a can of garbanzo beans, plus any additional spices or herbs you'd like, and bring to a simmer over medium heat.
When the mixture has been simmering for about 5 minutes, add in 6 ounces of goat cheese and stir to incorporate.
Once the potatoes have mostly cooked through, crack 4-6 eggs over the mixture. Cover and continue to let the mixture simmer for another 10-12 minutes, until the eggs have just set. Cook longer or turn the eggs over if you'd like them to be firmer.
