1 pound Mezza rigatoni pasta
2 tablespoons extra virgin olive oil
2 shallots, minced (or one very large one)
3 garlic cloves, minced
kosher salt and freshly ground (to taste)
1 pound assorted mushrooms, (I used cremini and shiitake, half pound of each give or take) sliced
1/2 cup white wine
1/2 cup vegetable stock
Few tablespoons of Mscarpone (add as much or as little as you want!) make sure it's room temp!
1/2 cup freshly grated Parmesan Cheese (do NOT use the pre ground stuff, it's gross)
1/4 cup chopped fresh chives
Few table spoons of parsley chopped
Prior to serving, Add more kosher salt and pepper (to taste, if needed)
