Easy stuffed 🍅
Heat oven to 375 F. Cook 1/3 cup quinoa. Once quinoa is ready, combine in a bowl with some feta cheese, kalamata olives, artichoke hearts, 1-2 cloves of garlic, and a gulf of evoo. Stir to combine.
Scoop the filling out of four tomatoes and stuff with mixed filling. Bake for 20-25 minutes until feta turns light brown and serve!
