Spelt and walnut bread
Poolish: 200g of spelt flour, 200mL of water, and 1/8 tbsp of active dry yeast. Let it become alive (it takes around 10h).
Then add 300g of spelt flour, ??? mL of water (I never know how much I add on this stage!), 10g of salt, and 1/4 tbsp of active dry yeast. Oh, and walnuts! Let it rise (2-3h), shape, proof, and bake!
