I have no idea what I'm calling this other than delicious. I saw another member @Lara Niamh posting a potato dish with feta cheese and tomato so I thought I would take a crack at it. Much more family style approach.
Thinly sliced red potato, fresh chopped garlic. Feta cheese, canned whole tomatoes. Season with salt, pepper, chili flake and olive oil. Layer and bake at 425 degrees covered for 40 minutes and then bake again for another 25 with foil removed. Think gluten free lasagna tasting. Garnish with fresh basil.
