Quick garlic kale pasta with a side of peas.
To make: bring a pot of water to a boil. De stem and chop kale then blanch in water for a few minutes. Pick out the kale pieces with a slotted spoon and maintain boil, replacing kale with chunky noodles. Cool noodles according to package instructions.
Meanwhile, drain and dry kale, set aside. Mince 2 cloves of garlic and combine with 1/4 C olive oil. Cool until garlic turns light brown, then addd kale and sauté for a few minutes. Once the kale looks good and cooked, season with salt and pepper and red pepper flakes and combine with noodles to serve.
