Dinner improv: Garbanzos, baby spinach,
Tomato paste, dab of Greek yogurt. Done.
Sautéed onion, garlic and ginger in olive oil.
10 minutes til fragrant. Dash of smoked paprika, dash of curry. Add the garbanzos, the tomato paste and the spinach. Add water so it simmers and doesn't stick. Pat of yogurt, stir. Simmer 20 minutes.
Serve with Naan, brown rice or quinoa. Season with salt and cracked pepper.
