Chop sweet and hot Italian sausages (three to four of each) into 2" pieces. Add to cast iron skillet. Drizzle with about 2 tbsp olive oil. Add salt and pepper to taste. Brown for 15 mins on medium heat to brown. Add about three dashes of Worchestershire sauce, dried chilies to taste (I use just a sprinkling) and another sprinkling of roasted pepper and garlic seasoning but only if I have it on hand. If not, this is equally delicious. Julienne red and green bell peppers (1 large of each) and a large sweet onion. Add half to the browned sausages. Reduce heat to low and simmer for at least two hours stirring frequently. Vegetables will slowly caramelize. Add the remaining half of peppers and onion for the last half hour. Serve as a side to your favourite pasta dish. Enjoy!
